1 ld lean ground beef
3 cups water
1/2 tsp salt
1/2 tsp cumin
1 1/2 cups long grain rice
1 tsp grated lime rind
1 Tbsp fresh lime juice

Toppings: salsa, shredded Cheddar cheese, tortilla chips, sour cream, chopped tomatoes, chopped green onions, cilantro, avocado sliced...whatever you like!

Cook beef until brown. Drain and pat dry with paper towels. Wipe can clean.

Add 3 cups water, salt, cumin to saucepan. Bring to a boil and add rice. (I actually just make it in my rice cooker) Cook until rice is tender. Stir in beef, lime rind, and lime juice. Serve salad with desired toppings. Good hot or cold!
