Meatloaf Recipe

1-2 lbs. ground beef
1 egg
1/2 cup unseasoned breadcrumbs or
1 slice very dry toast crumbled
1/2 can tomato sauce (reserve rest to pour over loaf)
1 tsp onion powder
1-2 tsp. French's mustard
salt and pepper to taste

Directions:
Directions:
Mix together with clean hands or with hands in baggies.
Form into a loaf in a baking dish. Pat until loaf is firm.
Place a slice of bacon across the top lengthwise.
Pour remaining tomato sauce over top.

Bake at 350º for 1 hour to 1 1/2 hours. Check halfway through. If there is a lot of grease, carefully pour off or remove with turkey baster. Loaf will be firm and no longer loosing juice when done.

Slice and serve.

Corn and baked potatoes are my favorite side dishes with this meal. If baking potatoes, wash, cut off ends, and pierce so they don't explode. Pace in the oven at the same time as the meatloaf.

Also, if you like meatloaf sandwiches, mash the remaining meatloaf with a fork while it is warm. Add mustard and mayonnaise to taste and mix until well blended. Enjoy!
