8 eggs separated
1 tbsp. sugar
1 1/2 c. cream
2 c. flour
1/2 c. melted butter
1 tsp. cardamom (optional)

Directions:
Beat egg whites until stiff. Beat sugar and egg yolks add melted butter and cream. Fold in sifted flour. Beat in egg whites. Cook in hot Ebelskiever pan turning with stick to form balls. Serve with cream, sugar and jam.

We first had this delicacy while visiting our cousins Nels and Shirley Rasmussen and their kids on their dairy farm in Astoria, Oregon. Shirley's home made raspberry jam made these even better.
