Directions:Combine all ingredients except salmon. Pour 1/2 cup of marinade into a large resealable bag and add salmon. Seal and turn to coat; refrigerate for up to 2 hours. Reserve remaining marinade.
Before starting the grill, spray the rack with nonstick cooking spray. Drain and discard marinade from salmon. Grill salmon, skin side up, over medium-hot coals for 2-4 minutes. Transfer (skin side down) to a double thickness of heavy-duty aluminum foil (about 17x21 inches). Spoon some of reserved marinade over salmon and seal packet tightly. Grill 5-6 minutes longer or until fish flakes easily with a fork. Brush with remaining marinade. |

Notes: Since I have discovered the "fish ladies" who sell fresh seafood from the back of their refrigerated truck in town, I have been looking for good fish recipes. This one is outstanding, moist and very quick. From Light & Tasty.
