Cooked Rice
1 lb. ground beef
1 egg
1/8 tsp pepper
1/3 cup dry bread crumbs
1/4 cup milk
1/4 tsp salt
1 & 1/2 cup salsa
thinly sliced green onions, to taste
Grated Colby-Jack cheese, to taste

Directions:
Directions:
Heat oven to 400º. Mix all ingredients except salsa & green onions. Shape into about 30 balls (1 inch). Place in an ungreased rectangular pan. Bake uncovered about 15 min. Meanwhile heat salsa on stove top until hot, add meatballs and serve over cooked rice. Sprinkle green onions & cheese on top.

This is one of Brandon's favorite dinners that he requests a lot. I adapted it from an appetizer recipe I saw in a cookbook and made it into a main dish.
