5 or 6 lg. leeks, thinly sliced
1/2 c. unsalted butter
1 qt. water
1 tsp. salt
4 lg. potatoes, sliced

Directions:
Directions:
Slice the white part of the leeks into very thin slices, about 1/4-inch or thinner. Melt butter in a sauce pan, add leeks and saute until tender. Slice about one-quarter cup of the green part of the leeks, to use as a garnish. In another pot, heat water and salt to almost boiling. Pour into sauce pan with leeks, cover and simmer for about 45 minutes. Add potatoes and cook another 20 minutes. Garnish with sliced green leeks and serve with warm bread.
