2 whole eggs
1 egg white
pinch of salt
4 Tbsp. flour
2-3 Tbsp. milk or cream
2 Tbsp. raisins, preferably soaked in light or dark rum for 15 minutes, then drained
2 Tbsp. butter (total)
powdered sugar for dusting
cranberry sauce or berry preserves

Preheat oven to 400 degrees.

Break egg and egg white into a mixing bowl. Beat with a wire whisk until well-blended and foamy. Whisk in salt, flour and milk or cream. Beat well, adding additional milk by driblets until a smooth batter is achieved.

Add batter to a medium non-stick frying pan over medium heat. In the batter melt 1 Tbsp. of butter and place in the center of the oven.

When bottom of pancake is golden brown, flip it over with a spatula. Immediately place frying pan in preheated oven.

In 4-5 minutes, remove pan from oven. Pancake will have puffed slightly.

Using two rubber spatulas or wooden spoons, and leaving pancake pieces against one pan, tear it into rough bite-sized pieces. Push pancake pieces against one side of the pan. Place pan back on a burner over medium heat.

In the "empty" half of frying pan, melt the remaining 1 Tbsp. butter, and then sprinkle the 2 Tbsp. sugar over the butter, and let it bubble for a minute or two.

Quickly toss the torn-up pancake with the cooked butter and sugar, then turn out onto serving plates. Dust with powdered sugar and serve with preserves on the side.
