1/2 cup Cinnamon
1/2 cup Vanilla Extract
4 cups Sugar
2 gallons Whole Milk

1. In a large bowl, whisk eggs. Add cinnamon, vanilla, and sugar, and whisk well. Whisk in milk. Pour batter into deep, full pan.

3. Check temperature on griddle – it should not smoke. Establishing the right temperature can be tricky. You must bend down regularly and turn the knobs while looking at the flames. They are very sensitive.
4. A cast iron griddle could be added next to the main griddle as well if you have room. In order to adjust the heat on the cast iron griddle you must pull the griddle off the heat so you can see the flames. Avoid guesswork.
5. Throw out burnt French toast, but crispy French toast is better than under-cooked and soggy French toast.
6. Remember to clean the griddle at the end of the shift according to the instructions posted by the phone.
7. • Leftover, uncooked bread should be wrapped in plastic wrap and then foil, and they should be frozen: house-made and valuable.
