1 3/4 beef cubed (dipped in flour)
6 -7 cloves garlic diced
1 onions chopped
2 stalks celery diced
1 cup carrots diced
4-6 red potatoes chopped
2 Idaho potatoes chopped
coarse salt and pepper (to taste)
1/2 cup red wine
1/2 - 1 cup vegetable stock
1 T olive oil

Optional
1 tsp crushed red pepper
2 springs rosemary
1 cup frozen peas- add in last 30 min of cooking

In a large skillet braise beef. Once braised remove beef from the skillet and add onions and garlic with a tablespoon of olive oil. Heat until caramelized .

In a large stock pot or slow cooker combine all ingredients. Bring to boil for 1 hour or until potatoes are soft. Then simmer for 3 to 4 hours.

Before serving add 2 T sherry or Port

Serve with rosemary lentils or brown rice or buttered egg noodles. Another option is to add Pillsbury biscuits to rest on top of the pot during the last 20 minutes of cooking.

My mom made the basic version of this beef stew recipe and I've experimented with a variety of versions. Try replacing the beef with pork or chicken and the wine and stock with beer and a 1/2 can of pumpkin. YUMMY Enjoy!!
