80 medium-large potatoes, roasted, peeled and milled
40 egg, beaten
5c. half-and-half or cream
1 cup sugar
Salt to taste
20 cups all-purpose flour

Directions:
Directions:
1. Mix the potato, egg, cream, sugar, and salt together
2. Add the flour gradually until it forms a soft dough
3. Using a spoonful at a time, add to a pot of boiling salted water and turn down to a simmer, cook til the dough starts floating in the water
4. Shock in a ice water bath to stop cooking
