Sopaipillas Recipe

4 cups flour
2 T. shortening
1 tsp. salt
2 tsp. baking powder
4 cups oil or lard substitute
1 1/2 cups warm water

Directions:
Directions:
Combine flour, salt, and baking powder in medium bowl.
Work shortening into flour make a well and add warm water. (just like flour tortillas)
Knead until smooth.
Let stand 20 minutes.
Heat 2" shortening in heavy pan at med-high.
Roll dough to 1/8 thickness on lightly floured board.
Cut into 4" squares.
Fry in hot oil or lard until golden brown (a lard substitute is best because it does not fill the kitchen with smoke)
Turn only once. (If shortening is hot enough, sopaipillas will puff and become hollow soon after being placed in hot oil.)
Drain on paper towels.

May be served with honey or stuffed with beans and ground beef or chicken, onion, chile and cheese.
