Directions:
Heat half and half alone until it is hot, than add the rest of the ingredients. Cook mixture on double boilers at a medium heat stirring constantly. As soon as sauce begins to thicken, turn off heat. Cover filling with Saran wrap and put in refrigerator. Leave overnight. When you go to fill the cannoli shells, whip the filling for quite awhile so there are no lumps. Concentrate on one area at a time when you are whipping with the hand mixer. Add chopped chocolate near the end of whipping, and more cinnamon if you would like. Fill cannoli using pastry bag or cut off a small end of a ziploc bag. Serve the day you fill them.
