80# of potatoes peeled and cut
1quart of cream
3quart of whole milk
salt to taste
sour cream (variable)
cold water to cover

Directions:
Directions:
1. In a large pot add the water, potatoes, and salt
2. put of medium to high heat
3. In another pot add the cream and milk and scold.
4. When the potatoes are finish, when they are falling apart, remove and strain through a colander
5. Allow the potatoes to sit 4-5 minutes in the open air
6. Mash the potatoes in the pot and begin the add the cream and milk mixture
7. After everything is mostly mixed, mix in the sour cream if you do not have any sour cream, cream cheese or yogurt may be used
