38# of diced raw chicken
20# of various vegetables, peppers, onions, mushrooms, peas, carrots, green beans, etc
10qts of thickened orange coriander sauce
1c. of paprika oil
flour to sight
Wondra flour to sight

Directions:
Directions:
1. In a large bowl add the flour and wondra flour together with salt
2. With the flour add the chicken and allow to evenly coat
3. In a shifter place the chicken and shake out any remaining flour out
4. In a large rondue heat the oil through and begin to gently add the chicken a few pieces at a time to the pot
5. After all the chicken has been sufficiently flash fried add all the vegetables and saute them in the same pot, you may need to add a little more oil
6. Add the sauce and heat through
7. Add the chicken back to the sauce and vegetable mixture and cover
8. Cook for 15-20 minutes on Medium heat
