20 cups Rice
2 1/2 cups Sugar
1 1/4 cups Cardamom
40 cups Water
Vinegar
1.5 cups of Olive Oil
3/4 cup + 1 tablespoon + 1 teaspoon Cinnamon
2 1/2 cups Turmeric
10 cups Black Currant or - Jelly

Directions:

1. Add oil to a pot and allow to heat slightly
2. Add the spices and cook for 30 seconds on low heat
3. Add the rice and toast in the oil for 1 to 1.5 minutes
4. Add water and other ingredients and stir in well
5. Put on simmer and cook till done, about 20-5 minutes

With the rice is down you can add dried fruit or sliced nuts like almonds to the dish to add a more toasted flavor
