2 T Pineapple or orange juice
1 T Reduced-sodium soy sauce
2 T Coarsely chopped onions
1/4 small red or green pepper, chopped
1 T Fresh ginger ground
20 oz package ground turkey
1/2 cup bread crumbs
1 large egg

Pineapple Chutney:
8 oz can juice-packed crushed pineapple (with juice)
2 T sugar
2 T vinegar
2 T chopped onions
1/4 small red or green pepper chopped
1 T minced fresh ginger
1/4 tsp crushed red-pepper flakes
1/4 cup or handful of golden raisins

Directions:
Directions:
Preheat oven to 350.

In mini food processor (or blender) combine OJ, soy sauce, onions, peppers, ginger. Process until vegetables are pureed. Pour into medium mixing bowl.
Add turkey, bread crumbs, and egg.

Cover baking dish (or 9x13 pan) with tin foil. Blend everything well with hands and pat mixture into a loaf shape on baking sheet. Bake in oven for 45 to 50 minutes, until loaf is brown on top and no trace of pink in the center. Let loaf stand for 5 to 10 minutes before slicing.

Pineapple Chutney:
In 4-cup microwave-safe glass bowl combine all ingredients. Microwave on high for 4 minutes. Let stand 5 minutes.

Serve on top of Luau Turkey Loaf.
