3 1/4 cup flour
3/4 tsp baking soda
1/2 tsp baking powder
1/4 cup shortening
2 T. Butter
1 cup dark molasses
1/2 cup sugar
1/4 tsp crushed cardamom seed
1/4 tsp anise
1/4 tsp cloves
1/4 tsp cinnamon
1/8 tsp allspice
1/8 tsp black pepper
1/4 cup cold coffee


Directions:

Sift together 3 cups flour, baking soda, baking powder.
Combine shortening and butter, molasses, sugar, spices and coffee. Blend well. Add dry ingredients gradually, mix thoroughly. Knead the remaining 1/4 cup flour into dough in bowl kneading until smooth. Cover bowl tightly and let stand at room temperature for 2 days. Then shape into small balls, 1 tsp a cookie. Bake at 350º for 15-18 minutes. Remove cookies and roll in powdered sugar. Store in airtight container with whole apple. Let ripen for 7-10 days. enjoy.
