1 1/2 lbs. carrots
1 lb. asparagus
Olive oil
salt and pepper

Directions:
Directions:
Wash carrots and asparagus. Break hard ends of asparagus. Dry vegetables. Use the small carrots from the bag., no the very baby ones as they will get to soft to quickly. Put oil on a sheet pan. Roll the carrots in the oil. season with salt and pepper. Roast at 400* for 20 min. Mix often to brown on all sides.

Can do this with any vegetable. Butternut squash, onions are good to do together. Add some green pepper for color. Start the squash first as it takes more time , then the onions and the pepper.
