1 1/2 lbs. small Yukon gold potatoes
1 1/2 lbs. small red bliss potatoes
6 Tbsp. olive oil
Kosher salt
Pepper and Paprika

Directions:
Directions:
Wash potatoes and dry them. Spread oil in the bottom of a roasting pan. Cut potatoes in half or quarters so that they are all about the same size. Roll the potatoes in the oil. Use you hands to make sure they are coated all over. Sprinkle generously with Kosher salt. Sprinkle pepper and paprika lightly over potatoes. Bake at 400*. for approximately 30 min or until soft. Mix the potatoes several times while baking to brown on all sides.

Can use fingerling potatoes or any potatoes. depends on how fancy you want to be. The 2 different kinds of potatoes add to the taste.
