3 eggs
1/2 cup oil
1/2 cup unsweetened apple sauce
1 1/2 cups sugar
3 cups flour
1 tsp baking soda
1 tsp salt
1 tsp cinnamon
1/2 tsp baking powder
2 tsp vanilla
2 cups grated zucchini
1/2 cup nuts optional

Directions:
Beat eggs, add oil, apple sauce, sugar and vanilla, flour soda , salt , cinnamon and baking powder. Mix well. Makes 2 loaves. Bake at 325 for 1 hour and 15 minutes.
