1 - 9 inch deep Pillsbury pie pastry
3-4 medium tomatoes, thickly sliced and drained on paper towels for at least 30 minutes
salt and pepper (to taste)
1 bunch green onions, chopped
8 oz. Monterey Jack cheese, grated
1/2 cup or more of real mayonnaise

Directions:
Place pie crust in an 8 or 9-inch pie dish. Prick crust to avoid bubbling when cooking. Bake crust at 425 degrees for 5 minutes and remove. Reduce oven temperature to 400 degrees. Place tomatoes in crust. Add salt, pepper and onions. Combine in bowl; mayonnaise and monterey jack cheese; use enough to spread all over the top of pie. Bake at least 35 minutes or until lightly golden brown on top and heated through. Avoid overcooking tomatoes.
