1 one lb bag 15 bean mix
1 large carrot, 2 stalks celery, one onion-diced
2 cloves garlic, minced
2 tablespoons butter
1 tablespoon chili powder
1/4 tsp red pepper flakes
1/2 tsp dried thyme
salt and pepper to taste
1 15ounce can diced tomatoes
2 boneless chicken breasts
1/2 lb smoked sausage, sliced and sauteed
2 potatoes, peeled and cubed
chicken broth and water

Rinse beans and set aside. Heat butter in a large soup pot. Sautee carrots, celery and onion in the butter until tender. Add the garlic and sautee for another minute or two. Remove from pot and sautee the sausage. Put the sauteed veggies back in the pot.Add the rinsed beans. Cover with chicken broth, water or a combination of the two. Add the seasonings and the diced tomatoes. Add the chicken breasts. Cook until the chicken is tender and the beans are done. Remove the chicken for the pot and let cool for a couple of minutes. Put the cubed potatoes in the pot. Shred the chicken and return to the pot. Cook until the potatoes are done. you may have to add broth or water while the soup is cooking to reach desired consistency.
