Ingredients:  
1 cup butter
1 cup brown sugar
1 egg, beaten
1 tsp vanilla
3 cups quick oatmeal
1/2 cup milk
1 tsp soda
Add enough flour to make a stiff dough to roll. Mix well, roll thin and cut with round biscuit cutter.
Spread with date filling on one cookie and top with another. Seal the edges.

1 lb. dates
1 cup sugar
1 cup water

Cook until thick. Cool. Follow directions above.
Bake until light brown at 350º.

Mom didn't make these often because it makes so few compared to other cookie recipes. They were delicious and were divided amongst the family sparingly. When they were gone, it was a long time before they were made again.
