1 cup sugar
8 tablespoons cornstarch
Dash of salt
4 cups milk
8 eggs, separated
2 tablespoons butter or margarine
2 teaspoons vanilla
1/2 teaspoon coconut flavoring
3/4 cup flaked coconut
1 baked 9 inch pie shell

Directions:
Directions:
Mix 1 cup sugar, cornstarch and salt in a heavy medium size saucepan; stir in milk. Cook over low heat, stirring constantly, until mixture thickens and boil 3 minutes. Beat egg yolks in a small bowl; slowly stir in 1/2 cup of the hot mixture, then stir back into saucepan. Cook, stirring constantly 1 minute; remove from heat. Stir in butter, flavorings and 1/2 cup coconut. Pour into baked pie shell. Beat egg whites until foamy, add remaining 1/4 cup sugar, one tablespoon at a time, until meringue stands in firm peaks. Spread over pie filling. Sprinkle with remaining coconut. Bake meringue at 350 º for 12 minutes. Makes 1 nine inch pie.
