4 medium tomatoes - peeled, seeded and coarsely chopped
4 garlic cloves - minced
1/2 cup chopped fresh basil
1 T chopped fresh mint
1 t salt
1/2 t fresh black pepper
1/4 t hot pepper flakes
1/2 cup extra virgin olive oil
1 pound small corkscrew macaroni
1/2 cup freshly grated Parmesan cheese
1/2 lb fontina cheese, diced or grated

Directions:
Directions:
In a medium bowl, toss together first 8 ingredients. Let stand at room temperature, tossing occasionally for 2 to 3 hours.
In a large pot of boiling salted water, cook macaroni 8 to 10 minutes. Drain and transfer to a large serving bow. Spoon off 1/4 cup of liquid from tomatoes and toss with the macaroni to coat. Then add all the cheeses and toss with cheese until cheese begins to melt. Add tomatoes and the rest of their liquid and toss until mixed. Serve warm or at room temperature.

I first had this salad when we lived in Nashville. I asked for the recipe and was thrilled to get it. Every time I made it I would give the recipe if asked. I eventually got a phone call from the girl who gave it to me asking me to stop giving it out!
