4 cups mayhaw juice
5 1/2 cups (2lbs 6 oz) sugar
1 box sure jell fruit pectin
1/4 cup butter (optional)

Directions:
Directions:
In large heavy pot, bring to full boil juice, sure jell and optional butter over high heat, stirring constantly. Add all sugar, stir and bring to full rolling boil. Boil 1 minute, stirring. Remove from heat, skim off foam from top. Ladle into hot jars but not full, leaving air space. Wipe jar rim with clean cloth to clean off any sugar. Cover with hot lids, screw band on tightly. Invert jars onto thick towel to sterilize or place jars in a hot water bath for 10 minutes. Yield about 5 to 6 pints.

Mayhaw berries are plentiful when in season in the spring, most grow wild but some are planted in gardens. The juice can be bought in gallon jugs. It makes making jelly much easier. My son, Toby, loves this jelly. I have to make it in quart jars for him instead of pints. I made my first Mayhaw Jelly on May 13,1987.
