1/2 cup shortening (1/2 butter and 1/2 lard)
2 1/2 cups sifted flour
1 1/3 cup sugar
3 tsp baking powder
1/2 tsp salt
1/4 cup maraschino cherry juice
16 maraschino cherries cut in eighths
1/2 cup milk
4 unbeaten egg whites
1/2 cup walnuts, chopped (optional)

Stir shortening, just to soften. Sift dry ingredients. Add cherry juice, cherries, milk, and beat 2 minutes. add egg whites and beat 2 minutes more. Fold in nuts. Bake in paper lined layer can pans at 350º for 30-35 minutes. Cool. Frost.

Grandma, Mrs Henry (Mary) Keller, was a very special lady. She often said she didn't have a thing to eat in the house but when you sat down at her table you felt as if you were royalty. She had enough food for an army. It reminds me of the Biblical story of the loaves and fishes. There was always enough for anyone who might walk in the door at the last minute and not have had dinner. She served everything from fried chicken, to a salad, potatoes, vegetable, bread, and always some kind of dessert. She seemed to love company especially her children and grandchildren and their families.
