1 cup long grain rice
2 cups chicken stock
1/2 cup white wine
4 Tbsp olive oil
2 chicken thighs
1/2 tsp paprika
2 cloves minced garlic
1/2 cup chopped onion
1/4 cup tomato (cut in half, grate and discard skin)
4 shriimp/prawns
4-6 clams and mussels
2 red peppers cut in strips
2 green peppers but in strips
1/2 cup artichoke hearts
1/2 cup peas

1. Heat stock and keep warm
2. Heat olive oil in large frying pay add chicken and fry until golden brown. Add garlic and onions and saute until translucent.
3. Add the rice, stirring until well coated with oil (about 1 minute). Add the paprika and grated tomato, stir adding wine and hot stock.
4. Bring to boil, scraping bottom of the pan, then add pepper strips, artichoke hearts and peas. Boil slowly for 5 minutes.
5. Add shrimp, clams, and mussels and cook another 15 min or until rice is done.
6. Sprinkle with chopped parsley and serve.
