2 lbs center cut beef tenderloin, trimmed
1/4 cup olive oil
2 tsp rosemary
2 tsp italian parsley
2 tsp chopped thyme leaves
2 tsp minced garlic
1 Tbsp Salt
1 Tbsp fresh ground pepper

Directions:
Directions:
Preheat oven to 400º
1. Rub Roast w/ olive oil until complete coated
2. Combine spices and cover beef with mixture by patting it on.
3. Sear the beef over high heat in an oven proof skillet. Turn until brown on all sides, about 5 min.
4. Place skillet in oven and roast for 20-25 minutes.
4. Remove from oven and let stand for 10 minutes before slicing.
Serve with green beans and grilled red onions
