30# of peeled and bias sliced carrots
4c. of raisins soaked in hot water
1.5qts of yellow curry sauce (page##)
1c. oil

Directions:
Directions:
1. In a large stock pot bring a pot of water to a boil, enough water to blanch the carrots, and season with salt
2. Remove the raisins from the water and reserve the water
3. Remove the carrots from the blanching liquid and shock in ice water to cancel cooking
4. In a large rondue, heat the yellow curry sauce and add oil and adjust the seasoning
5. Add blanched carrots and raisins and allow to reduce liquid till it glazes the carrots
