Romaine lettuce if applicable
5qts Long grain rice
10ea half peeled cucumber
2ea bananas
1.5c. Raisins or another dried fruit
.5c. chopped almonds
2c. olive oil
5c. lemon juice
lemon zest
Salt
4tbl ground coriander
4tbl ground cumin
1TBL honey

Directions:
1. Cook rice and allow to cool
2. Emulsify the lemon juice, zest, and olive oil together and then add the almonds, raisins (or dried fruit), salt and spices, and mix vigorously
3. In a separate large bowl mix the rice (if applicable) cucumbers and any other raw vegetable that is sense-able together
4. Pour the fruit mixture over the rice and mix well, correct seasoning as necessary
5. At the very end, after everything is well mixed, add the bananas and lettuce. The lettuce is really more of a garnish then the body of the salad
