16 ounces frozen corn
32 ounces chicken broth
12 ounces Velveeta cheese,cubed
6 thick slices of crisp cooked bacon, crumbled
3 green onions, chopped

Serves: 6-8
Preparation Time: 30 minutes

Cook corn in broth in large saucepan. Bring to boil over medium heat. Reduce heat, simmer for 10 minutes. Mash up corn slightly. Stir in Velveeta and half of bacon. Cook until cheese is melted, stirring frequently. Top with crumbled bacon and green onions.

You can also use cauliflower or broccoli or carrots rather than corn. Of course, then it would not be corn chowder. :)
