Pasta water, water that has been used to cook pasta
1c. slivered garlic
5ea sliced onions
pinch crushed red pepper
4 generous hand fulls of parmesan cheese
1.5 cups of olive oil
1T of butter

Directions:
Directions:
1. When you cook the amount of pasta desired, strain and reserve the liquid
2. Toss the pasta with half the olive oil, salt, and crushed red pepper
3. In a large sauce pan, preferably the same one used to cook the pasta, add the remaining olive oil, garlic, and onions and sweat them seasoning with salt
4. When the onions are tender and the garlic is translucent add the pasta water a little at a time allow it to reduce and thicken with the starch that is in the water
5. When the sauce as come together with the desired thickness, shouldn't be extremely thick but shouldn't be water, add the pasta and toss so it is well incorporated
6. Add the parmesan cheese and water fresh herbs are available, parsley, chives, thyme, basil, a mix of them all any

This is a tricky sauce to master and takes some patience to allow the proper amount of time for the water to reduce and the pasta starch allow to thicken the sauce
