6 slices of bread
liver, heart and gizzard
1 small onion
1/2 tsp. salt
1/4 tsp. pepper

Grandma Zimbo's directions:
"Toast about 6 slices of bread. Cook the liver, heart and gizzard and when cool, soak the toast in it. Squeeze out and put in a pan.
Cut one small onion. Add egg, salt and pepper. Cut the meat up or grind it with the onion. Tbsp. butter. Mix all together and stuff your chicken. Add sage if you like it. Just a little bit."

Our first "fowl" from scratch was a Thanksgiving turkey prepared under the tutelage of M.O.M. when she and Daddy came to Munich the fall Jan was born. This has been our stuffing recipe ever since (with the variation that we cook the neck with the innards and then use only the broth for the stuffing, adding fresh sage from our garden and sometimes chestnuts or apples and walnuts).
