20lbs of Various peppers
3 cups spice oil ie roasted garlic or ginger
10ea med-lg onions
salt to taste

1. Preheat the oven to 500º
2. Toss the peppers with salt and oil and place on a sheet pan
3. Roast in the oven until they get black on the out side, but the oven has to be that temperature do not place in the oven at any lower of a temperature, this will soften the peppers before they roast.
4. After they have sufficiently roasted in the oven, place them on the speed rack and allow to slightly cool, but not cold, when you peel them it's easier to peel when they are still warm from the oven.
5. Peel, seed, and slice.
6. Place in olive oil with rosemary and garlic
7. After the peppers have marinated in the oil for about a day strain some of oil and saute the onions with that oil and season with salt
8. Add onions to the marinade

These peppers can be used to make a soups, like roasted pepper and tomato soup (Page ##), pasta, salad dressing, and with different sauces and proteins.
