25med-lg Onions preferably sweet, sliced
1/2lbs. Butter
2c. Olive oil
15lbs of apples, sliced
3TSpiced vinegar ie. lemongrass, apple, cider, ginger, etc
Salt to taste

1. In a large sauce pan or rondue (braiser) add the olive and heat, then add the butter let the butter melt and get "bubbly" then add the onions and do NOT season with salt
2. Allow the onions to cook and caramelized if they are browning this is a good thing if they are getting a dark black this is a bad thing
3. The onions should be a rich deep amber color when you add the apples, preferably you want a starchier apple like a stamen or a unripened apple so they don't fall to terribly apart
4. Let the apples caramelize in with the onions and add your vinegar
5. Layer on a sheet pan and allow to cool

This can be used a number of different ways, you can start a stock out with this make a caramelized onion stock or soup. You can also spread it on pizza and add blue cheese and toasted walnuts as a topping with a drizzle of honey blossom.
