1 (1 lb) pack dried kidney beans
1 lb polish kielbasa
2 bay leaves
3 cloves garlic (minced)
2-3 T Cajun seasoning
1/2 c diced onion
1/2 c diced celery
1 t salt
1/2 t pepper
1 ham hock or smoked neck bone

Long grain rice cooked according to package directions

Directions:
Directions:
Bring kidney beans to a boil. Drain, rinse and cover with water. Add ham hock. Add bay leaves, celery, onion, Cajun spice, garlic, salt and pepper. Bring to a slow boil. Turn down to medium heat. Simmer until beans are tender (about 3 hours). Slice sausage and add to beans. Heat through. Serve over long grain white rice.
