3 egg yolks
1 whole egg
3 T. cold water
2 cups sifted flour
1 tsp salt
Beat eggs yolks and whole egg together until very light. Beat in salt and water, then flour. Work with hands. Cut in 3 parts. Roll each piece paper thin on lightly floured board. Cover with towel until partly dry, then roll and cut thin or heavy, as desired. Shake out strips and allow to dry. Then boil in boiling water until done. Use in soups or casseroles.

Mom made noodles often especially when she made chicken soup. She didn't have any fancy equipment. Her floured surface was the table top. A butcher knife and rolling pin were her tools to make the noodles. She often made the noodles and the soup the same day.She had sheets of noodles drying on the kitchen cupboard and table. I, being the oldest daughter, was too young to help her with them. She usually did it by herself figuring it was quicker than trying to tell someone else how to do it.
