1 large can Yams (or cook several fresh)
1 - 15 oz can apricot halves
1-1/4 cup brown sugar
1/2 tsp salt
1 tsp orange zest
1-1/2 T corn starch
1/2 tsp cinnamon
2 T butter
1/2 cup chopped walnuts or pecans

Directions:
Directions:
Lay yams in a 13x9 baking dish. Place apricot halves onto the yams. Reserve juice. In a saucepan, mix brown sugar, salt, orange zest, corn starch, cinnamon and butter. Bring to a low boil, add a little of the apricot juice and cook 2 minutes. Add nuts and pour over apricots and yams. Bake at 350 º for 25 minutes.
