2 pkgs (12 oz) bulk pork sausage
1 med bell pepper (red & green), chopped
1 med onion, chopped
3 cups frozen hash browns potatoes
2 cups shredded cheddar cheese (8 oz)
1 cup original Bisquick mix
2 cups milk
1/4 tsp pepper
4 large eggs

Heat oven to 400ºF. Spray 13X9 inch glass baking dish.
In 10-inch skillet, cook sausage, bell pepper and onion over medium heat 8 to 10 mins; drain. Mix sausage mixture, potatoes and 1 1/2 cups of the cheese in baking dish.
In med bowl, stir Bisquick mix, milk, pepper, and eggs until blended. Pour into baking dish.
Bake uncovered 40-45 mins or until knife inserted in center comes out clean.
Sprinkle remaining cheese (1/2 cup) and bake another 1 to 2 minutes.

Short cut: use hash brown potatoes with peppers and onions.
If your dish is taking too long to cook; microwave for 2 minutes at a time until knife comes out clean.
