2 Tbsp olive oil
1 lb. large fresh shrimp, peeled and deveined
2 cloves garlic, minced
1 8 oz. round smoked Gouda cheese
4 oz. prosciutto or deli cooked ham, very thinly sliced
1/2 c. olive oil
1/4 c. white balsamic vinegar
2 Tbsp. chopped fresh rosemary
1/8 tsp. ground red pepper

Directions:

Heat 2 Tbsp. olive oil over medium heat in a large skillet. Saute shrimp, garlic, salt and freshly ground black pepper to taste in oil for 3 minutes or until shrimp turn pink. Cool.

Cut cheese into 1 inch cubes. Cut proscuitto or ham into thin strips and wrap around cheese cubes, wrap shrimp around cubes and secure with picks. Cover and chill for 10 minutes.

Whisk remaining 1/2 c. oil, balsamic vinegar, rosemary, and red pepper in a large bowl. Add shrimp and toss. Remove shrimp from marinade. Place shrimp on a lettuce lined platter, if desired.
