5 large white potatoes (peeled and cubed)
3 eggs (hard boiled and sliced)
1/2 c sweet pickle cubes
1/4 c celery (finely diced)
S & P
1 to 1 1/2 c mayonnaise
1/4 c yellow mustard
Directions:
Directions:
Cook the potatoes until soft. Drain well. Slice hard boiled eggs and add to the potatoes. Add pickles and celery, salt and pepper. Mix in mayo until salad is the consistency you desire. Add and mix in mustard.

Garnish with dry or fresh parsley.

This potato salad is my family's favorite. I learned to make it standing in a chair beside my Mama Essie in her kitchen.
