1 1/2 lbs. firm Clementine (5-7) cut horizontal into 3/4 in- thick slices
1 C honey
1 C granulated sugar
5 whole cloves
2 green cardamon pods
1 (4-in.) stick cinnamon
1 C water

Directions:
In a 4-qt. saucepan, bring 1 C water & honey, sugar, cloves, cardamon, and cinnamon stick to a boil over high heat.
Gently slip the Clementine, into the liquid without stirring. (If any slices are mostly rind, place them rind down.) Return to a full boil and then reduce heat to low, cover, and simmer for 10-min. Remove the pan from heat, cover, and set aside overnight, at least 8 hours or upto 12 hours.
Spoon & gently pack the slices into a 1-qt. canning jar. Bring the syrup in saucepan back to a boil over medium-high heat; boil 3-min. to concentrate the flavors.
POUR syrup over the slices to cover; discard any excess syrup.
Cool to room temperature. Seal & refrigerating. for at least 1 week before using. The Clementine will keep in refrigerating. for upto 3 months.

Can substitute the fruits with Valencia oranges, Meyer lemons or seeded tangerines.
Usages: delicious served as dessert with vanilla ice-cream or chop and add to frosting of a cake.
Try with a lamb tagine, or use as stuffing for roasted duck or chicken.
