1 collard
2 lbs pork ribs
salt and pepper to taste

Directions:

Clean collard well. Cut up and remove big woody stems. Place in a large dutch oven or soup pot. Fill pot half way with water. Add uncooked pork ribs. Bring to a boil. Turn down to medium heat . Add salt and pepper. Cook until ribs fall off the bone and most of liquid is gone. Approximate cook time 4 - 5 hours.

Serve with hot pepper vinegar, black eyed peas, mac and cheese casserole, sweet potato souffle and cornbread. A true country boy's dinner!
