1 cup water
1/2 cup butter or margarine
1 cup flour
4 eggs
Filling (pudding or whipped cream)
Sweetened whipped cream
Confectioners sugar
Directions:
Directions:
Heat oven to 400º. Heat water and butter to rolling boil. Stir in flour. Stir vigorously over low heat, about 1 minute, or until mixture forms a ball. Remove from heat. Beat in eggs all at one time. Continue beating until smooth. Drop dough by scant 1/4 cupfuls 3 inches apart onto ungreased cookie sheet. Bake 35-40 minutes or until puffed and golden. Cool away from draft and cut off top (around 2/3 of the way up the puff). Pull out any filaments of soft dough. Carefully fill puffs. Replace tops and dust with confectioners sugar. Refrigerate until serving time. Makes 12 puffs.

Note: For the filling use any flavor pudding or whipped cream. For a luncheon, fill with chicken salad. You can also make mini-cream puffs instead of the full size puffs.
