6 (5oz) salmon steaks
1 Tbsp butter
2 tsp lemon pepper
2 tsp lemon juice
1 tsp lemon pepper
1/2 tsp garlic powder
1/2 tsp onion powder
6 thin onion slices
3 lemon slices, halved
1 tsp dried tarragon
1 tsp paprika
Dash of salt

Place butter in a 3-quart oblong glass baking dish. Microwave on high for 30 seconds until melted. Coat bottom of dish with butter and sprinkle with 2 tsp lemon pepper. Place salmon steaks in dish. Sprinkle with lemon juice, 1 tsp lemon pepper, garlic powder and onion powder. Place one onion and one lemon slice on each salmon steak. Sprinkle with tarragon, paprika and salt. Convection bake at 325º for 20-25 minutes or until fish flakes easily.

This recipe comes from Dad's brother, our Uncle Rick. The first time I cooked this recipe in college I used a shallow baking dish, which led to a small catastrophe in the kitchen. The butter overflowed the dish and started all these small grease fires in the oven. I scrambled to open the windows and doors and get the smoke out of the house before the fire alarm went off. Fortunately, no lasting harm was done, and even the salmon turned out okay!
