3 medium avocados, mashed
1 Tbsp cooking oil
1 Tbsp butter
1 lg red onion, chopped
1 red pepper, chopped
6 cloves garlic, minced (2 Tbsp)
1 (14 oz) can chicken or vegetable broth
1 1/2 cup whipping cream
1 cup bottled salsa
1 tomato, chopped
2 Tbsp lime juice
2 Tbsp lemon juice
1 Tbsp ground cumin
1 tsp ginger
Pepper to taste

Cut the avocados in half, peel, seed and mash them.

In a 3-quart saucepan heat oil and butter over medium heat; add onion, red peppers and garlic. Cook and stir onion and garlic about 5 minutes or until tender. Stir in avocado, broth, whipping cream, tomatoes, salsa, lime juice, lemon juice, cumin, ginger and pepper; heat through.

To serve, ladle soup into bowls. If desired, serve assorted toppers such as avocado slices, lime slice, or sour cream. Makes 6 to 8 side-dish servings.

I like to spice things up with a little rosemary or thyme. This is a great Lent recipe because it's easy to make vegetarian, and one of the few recipes I cooked as a college student because it's easy and guests are always impressed. ~John
