6-7 medium Potatoe whole and unpeeled
3 inner green stalks of Celery
1/2 C finely chopped Onion
1/3 C chopped Sweet Pickle Relish
1 1/4 C Best Foods Mayonnaise
2 tsp Sugar
2 tsp Vinegar
2 tsp Prepared Mustard
1 tsp Salt
opt: 2 hard boiled Eggs coarsely chopped
opt: 1 Sweet Red Pepper choppped

Directions:
Directions:
In a saucepan cook whole unpeeled washed potatoes covered in boiling salted water for 30 mins or till tender; drain well. While still warm but not hot, cut potatoes into cubes into a large bowl. Add celery, onion and sweet pickle or relish. In 2 cup measuring cup, combine mayonnaise, sugar, vinegar, prepared mustard and salt. Stir mayonnaise mixture into cubed potatoes breaking up pieces with a fork and table knife until desire consistency. Carefully fold in optional hard boiled eggs. Refrigerate. If desired, add chopped sweet red pepper just before serving.
