1 (8 oz) package cream cheese
1 can of sweetened condensed milk
1 small container Cool Whip (or 2 cups)
lemon drink powder to taste (Crystal Light, etc.)
pie crust of choice

Meringue:

3 egg whites
1/4 c sugar

Directions:
Directions:
Soften the cream cheese and beat well with the condensed milk. Add the Cool Whip, mixing well. Sprinkle in the lemon drink powder until desired lemon flavor is achieved. Make meringue by beating the eggs whites, gradually adding sugar until stiff peaks are formed. Spoon filling into pie crust and top with meringue. Preheat oven to 425º degrees. Brown meringue quickly. Cool in fridge before serving.

You may substitute meringue for a dollop of whipped cream, a sprinkle of lemon powder or lemon zest and a thin slice of lemon.
