2 dozen eggs
1 bunch green onions
1/2 green bell pepper
1/2 red bell pepper
1 1/2 cups sliced mushrooms (your favorite)
1 t garlic powder
1/2 t dry mustard
S & P to taste
1 c sharp cheddar cheese
3/4 c mozzarella cheese

Directions:
Directions:
Beat eggs. Mix in garlic powder, dry mustard, salt and pepper. Add shredded cheeses reserving 1/4 c of cheddar. Mix. Add chopped onions using the green ends, the julienne peppers and the sliced mushrooms. Mix gently. Pour into an oven proof skillet or baking dish. Sprinkle remaining cheddar cheese over the top. Bake in oven at 350º until knife inserted in center comes out clean. Cooking time will be approximately 20 to 30 minutes depending on the size pan you use.
